Lola's Cupcakes!


Lola's cupcakes. I found them on Instagram and I think they make beautiful cupcakes and i think that they have been beautifully presented! On Instagram they are called lolascupcakesbahrain and they just post all of there cupcakes and cakes on their Instagram. They mainly make cupcakes but you can see on there that they do bigger cakes aswell!

Some Bits I Like!




These are some bits that I thought would be good for the summer and stuff that I just thought would be cool!


The first picture is an egg rack/egg holder and it's self explanatory it holds eggs on it and I just thought it was really cute. Also in white!


The next one is jars that I thought were really handy to have to either put flour, sugar, coffee, tea bags and things like that I thought you could also put sweets in them or biscuits would be a cool idea. There are also flour tins, and tins to put things in.

The 3rd picture is a jelly mould which I thought was amazing and a good idea to make and great for summer! Obviously you can make any flavour jelly that you want and it makes the shape of jelly.


The last one is a rocket lolly mould which would be amazing for the summer time and you put any flavour juice that you want put it in the freezer and you have your lollies.The best for the summer time.

Chocolate Swirl Cake



Today I am going to be making a chocolate swirl/marble cake!It's a really easy method and recipe.So Let's Go!






Ingredients:

225g of butter,softened 

225g caster sugar

225g self-raising flour

4 eggs

2 tablespoons of coca powder

3 tablespoons of milk

1 teaspoon of vanilla extract



What you need:

Teaspoon

Tablespoon

Mixing Bowl

Measuring Scales

Cake Tester 

Icing Spatula

Greaseproof Paper 

A Deep Baking Tray,Circle tin.


Method:

1.Pre-heat your oven to 180c/350f/gas mark 4.Then line you baking tray with your grease proof paper and you can cut a circle for the bottom if you want it to be easier,when you stick it up the sides and it falls just get a little bit of left over butter and place it onto the paper and it will stick to the baking tray.

2.Once you have done all of that then you can mix all your ingredients together EXCEPT THE COCA POWDER!For 1-2 minutes.

3.Divide your mixture into two different bowls,then mix the coca powder into one of the bowls and mix.

4.Then get two different spoons and get a spoon of the normal mix,the one without the coca powder, and put it in your tray/circle tin and then the mixture with the coca powder.

Vanilla mix,coca mix,vanilla mix,coca mix,vanilla mix,coca mix.

^Like that!

5.Once you have used up all the mixture and it is in your cake tin then use a skewer or tooth pick you just swirl around the mixture to create the marble effect I recommend the skewer because it is much longer so you can marble the whole cake.

6.When you have finished marbling the cake then put it into the oven for about 44-45 minutes or until you put your cake tester in and it doesn't come out wet.

After it has finished in the oven then you need to change it over to a cooling rack and then let it cool for a bit.

Flower Pot Cakes


Today I am going to be making flower pot cakes! Which is really fun to make! There are two different types that I had made the white flower was Oreos on the top so it looks like soil, and the pink flower was digestive/rich tea biscuits just in case somebody didn't like Oreos!

So have fun making these!:)


Equipment:

1 teaspoon (5ml)

Scissors

Two circular baking trays

A sieve 

Grease proof paper

Weighing scales

Tooth picks

Icing spatula(See equipment if not sure)

Cake tester

Flower pots

Fake or real flowers (I recommend real flowers)

Mixing bowl with electric whisk or hand whisk

Round cookie cutter


Ingredients: 

2 eggs

Any ice cream of your choice 

1 teaspoon of vanilla extract

125g(4oz) of self raising flour

125g(4oz) of caster sugar 

Oreos or any other biscuit you like


Method for the cake:

1.Line your two baking trays with you grease proof paper it may not stay to the bottom but that doesn't matter because when you put your mixture in then it will stay down.

2. Pre-heat the oven to 180C/350F/Gas mark 4.

3.Then mix all you ingredients together and try and put half and half in each tin. Remember if you have the icing spatula you can use it to get the excess mixture out of the bowl so that you don't waist any.

4.Now once you have added all you ingredients in and you have separated the mixture into each tin then put your tins in the oven at gas mark 4.

5.Remember to keep checking your cakes if you think that they have finished then just check them with your cake tester just to make sure.

Method for the flower pots:

1.Get your flower pots and your cookie cutter.

2.With your cookie cutter and cut as many circles as you want to out of the sponge.

3.Put one circle at the bottom of your flower pot then get an ice cream scooper or a spoon and scoop 3 spoons of ice cream and then flatten it down.Then keep adding a sponge and then ice cream on top and keep doing that until you have gotten to the top.On the top you need ice cream.

4.Once you have your ice cream on top you are going to have to crush your biscuit that you are using.

5.After you have crushed your biscuit and it looks like it would cover your ice cream then go ahead and pour it on to make sure that you cover all the ice cream.

6.Cut your flower to a short length but so that you have about 4cm/5cm then get your tooth pic and place it up the middle of the stem but not right to the top.Don't worry if it splits a little bit it will cover up.

7.Then place your flower down the middle of the cake and you will be done.

If you have any circles left then you can split them in half so that there is a top and bottom and a jelly/jam butter cream to the middle and place the top back on and there you go you have mini sponges aswell.


That's it sit back,relax! And enjoy the delicious side of life!
Now trick all your family because the crushed oreos will look like dirt and they will think its real so have fun and eat!

Cake tester and Icing spatula

Cake tester to put in the cakes to make sure that they have been cooked straight through the middle as well as outside.


















The icing spatula which you can use to get the rest of the mixture or icing out of your mixing bowl to make sure that you never waist anything.



Plain Vanilla Cupcakes


Today I am going to be making plain vanilla cupcakes!But if you just want plain cupcakes with no vanilla you do not have to add the vanilla extract.



Ingredients:
  • 110g/4oz butter or margarine, softened at room temperature

  • 110g/4oz caster sugar

  • 2 free-range eggs, lightly beaten

  • 1 tsp vanilla extract (do not have to add)

  • 110g/4oz self raising flour 

  • 1-2 tbsp milk (do not have to add)


Buttercream icing:

  • 140g/5oz butter, softened

  • 280g/10oz icing sugar

  • 1-2 tbsp milk

  A few drops of food colouring


Equipment:

1 teaspoon(5ml)

Cupcake cases 

Mixing bowl

Measuring scales

Cupcake tray

Hand whisk or Electric whisk


Method:

1.Preheat the oven to 180C/350F/Gas 4 and line a 12-hole cupcake tray with cupcake cases.

2.Mix the butter,sugar,flour,eggs,vanilla extract,butter or margarine and milk if you want to use milk.Remember if you don't want vanilla cupcakes then you don't have to add the vanilla extract.

3.Once it is all mixed get a tablespoon and a teaspoon.Then get the mixture on your spoon and then with you teaspoon scrap the excess mixture off the tablespoon.If you still have some mixture get and spatula and take it out.This should be easier to get the rest out.

4.Once you have filled all the cases then you need to put in you cupcakes into your oven and leave for 10-15 minutes or until you can see that they are golden brown.Just in case your not sure that they have cooked right through the middle then you can grab a cake tester/tooth pick and just place it through the cake and when you take it out if its wet they still need cooking but if it isn't then they have finished.

5.When they have completely finished then take them out of the oven (use oven gloves) and get a wire rack and then transfer them onto the wire rack and let them cool down.

Buttercream icing:

1.Get a large bowl and add the butter and half the icing sugar until smooth.

2.Then add the remaining icing sugar with one tablespoon of milk until the mixture is smooth and creamy.If your mixture isn't smooth and creamy then you need to add a tiny bit of milk at a time.

3.If you would like you can add food colouring but this isn't a major thing you need to add.
